One way is to first get a list of every file in the directory.
Create first batch file like this and place it in the directory and run it.
dir /b > filelist.txt
pause
The pause will require you to tap the space bar.
Open up filelist.txt and copy it into excel in column B.
You can run a random number generator in column A.
Column C will have
=concatenate("rename ",a1," ",a1,b1)
Highlight the first cell, hold down the Shift key and arrow down to the end of your list and then release Shift key then ctrl d. This copies the formula down.
Dump column C into a batch file.
Stick a pause command at the end. This requires you to hit the space bar. Otherwise it runs too fast and closes.
I am sure there is a simpler way.

You can't replace a wet ingredient with a dry ingredient and hope for the same result. You can substitute corn syrup or honey, but the flavor will be way off. You could also try boiling the sugar with a little water to a syrup, providing you don't heat it too hot or make it too watery.
If there is enough seperation (wall wise) it may not look that weird as long as you don't try to match. Let's say you have "dark cherry" laminate, or whatever. Don't do another dark colour. Do a lighter colour, by enough shades that it doesn't look discoloured. So using the dark cherry example, I would match that with a light red cherry or maple.
Take samples home and see what you think.
Also, regarding the unavailability of the laminate, since you only got it done 8 months ago, there may be some left even if it was clearance. Call the supplier of the product… there may just be enough laying around to complete your kitchen/hallway.
